Miracle Whip Cake

I found the recipe for Miracle Whip Cake in one of boxes of inherited “stuff”.  It is in my Grandmother’s handwriting on an old yellowed card.  On the back side of the card my mom has written, recipe from Mom Delano.  So I decided to give it a try.  I thought the recipe strange, in that it takes no eggs, so I googled it and none of the recipes I found took eggs and they were all very similar.  Of course Miracle Whip has eggs in it anyway.  They say this recipe was put together back during World War II when food was rationed.  I only know that it is old.  I remember, when I was a little girl, my mom used to make a chocolate cake that had no frosting and I believe this to be that recipe.  We always ate it warm from the oven with fresh cream on it.  No, not whipped cream, just cream.  Yes, we had a cow and the cake was wonderful fresh from the oven with cream on it.

A moist dense chocolate cake.

Ingredients
  • 2 Cups Flour
  • ¼ Cup cocoa powder
  • 2 tsp. baking soda
  • 1 Cup sugar
  • 1 Cup luke warm water
  • 1 Cup Miracle Whip (not mayonaise)
  • 1 tsp. vanilla
Instructions
  1. Preheat oven to 375 Mix dry ingredients together then add the Miracle Whip and liquid ingredients. Mix together. The batter will be thicker than cake mix batter is. This can be baked as 2, 8 inch layers or a 13x9x2 cake and just frost it in the pan if desired. Bake in a greased and floured pan or use pan spray. Bake for 30 minutes or until toothpick comes out clean.
  2. Serve cooled with your choice of frosting or warm from the oven topped with fresh cream.

I put peanut butter frosting on it for this post. I thought it would make a better picture that way.  My husband loves Reeses Peanut Butter Cups, so he chose the frosting.  I have to say the cake was much better with cream on it, though.  When I googled the cake it was posted with many different kinds of frosting, but the recipe I have actually has no frosting, and that is how I like it.  This recipe has been posted many times by many different people, so I suppose I have as much right as anyone to post it. Miracle Whip Cake piece I dug out  Mom’s old dishes that she got for a wedding present back in 1960 to photograph her cake.  I only have the 1 cup and saucer from those old dishes, but they bring back happy memories.♥♥♥
